Its ingredients
The ancient time-honoured recipe is faithfully reproduced by VOGRIG. The cake is made with leavened dough, rolled up upon itself so that it takes the typical snail-shell shape, and containing a filling made with walnuts, hazelnuts, pine-kernels, sultana, crushed macaroon biscuits. In all, there are 18 ingredients, blended together with ancient wisdom. It is completely free from preservatives and coloring agents, and its taste and fragrance can remain unaltered for months, if it is kept in a cool and dry place.
How to enjoy it (How to Serve It)
The "Gubana" by VOGRIG is light and nutritious, and it is ideally suited for breakfast or for tea-time. It is an ideal conclusion for the lunch. It can be served together with a medium-sweetness wine having a marked taste structure and importance, ideally a Verduzzo wine, and even better a Verduzzo from Ramandolo.
The tale
A tale is told about a poor mum living in the Natisone Valleys who had nothing to sweeten the Christmas meals with. So she prepared for her children a cake made with what she had at home: flour, eggs, walnuts and honey. The regional tradition requires the "Gubana" as an unfailing presence for the high festivities, such as Christmas and Easter but also for wedding banquets; the bride and bridegroom used to present every guest with this delicious cake. The "Gubana" is a very well-known confectionery speciality, which was born in the green valleys the Natisone river runs through, creating a landscape of rare beauty a few kilometers east of Udine. The term "Gubana" is a Slovenian word deriving from "gubat", which means "to roll up". In the local dialect it is called "Gubanza", which became "Gubana" in Italian.
